Cooking steps
To prepare the pickled tomatoes and tahini seasoning, in a small plate, add coriander, cumin, half the quantity of the black pepper, and 1 pack of salt, and juice of half a lemon. Then, chop a clove of garlic and add it to the spices, along with a tablespoon of vinegar, and stir.
Cut the tomatoes as per the desired shape and season them with a spoonful for each tomato.
To make the tahini, add tahini to the remaining pickling mixture, a spoonful of oil, a quarter cup of water, and stir.
Peel the onion and grate it. Then cut the hot pepper into rings and mix them together.
Using a strainer, squeeze the grated onion and pepper rings mixture to get rid of as much water as possible.
Discard the extracted water.
Add the minced meat to the onion and chili pepper mixture, then add 2 packs of salt, the remaining quantity of the black pepper, and nutmeg, then mix well.
Divide the hawawshi mixture into equal-sized balls.
Open the bread and spread the meatballs well, then press on it manually until the meat sticks to the upper and lower layers of the bread.
Brush the hawawshi loaves with oil, then in a pan over medium heat, after adding a spoon of oil and greasing the pan, put the hawawshi and then flip it until the bread becomes brownish from both sides.
Serve it with the seasoned tomatoes and tahini, and enjoy.
